German Chocolate Cake Cookies

Cookie Ingredients

1 C calted butter softened
1 C light brown sugar
1 C granulated sugar
2 tsp vanilla
2 large eggs
2 1/4 C all-purpose flour
1/2 C unsweetened cocoa powder
1 tsp baking soda
pinch salt

Cookie Preparation

  1. Preheat oven to 375 degrees F
  2. Line baking sheets with parchment paper
  3. In stand mixer mix butter, brown sugar, granulated sugar, vanilla & eggs
  4. In medium bowl stir together flour, cocoa, baking soda, salt.
  5. Gradually add the flour mix into the butter mixture and blend until combined.
  6. Drop the dough by tablespoonful onto the prepared baking sheets, 12 cookies per sheet and bake 8 to 10 minutes
  7. cool on baking rack


Frosting Ingredients

1 C evaporated milk
1 C sugar
3 egg yolks
1/2 C butter
1 tsp vanilla
1-1/3 C sweetened shredded coconut
1 C chopped pecans
1/4 C chocolate candy coating melted for drizzle (optional)
pinch salt

 

Frosting Preparation

  1. Add evaporated milk, sugar, egg yolks, butter and vanilla to a large pan and place on stovetop over medium heat.
  2. Stir so it's well combined. Continue stirring until thickened. (approximately 11-12 minutes)
  3. Once thickened, remvoe from heat and add coconut and pecans... beat until thick enough to spread
  4. spread over tops of cooled cookies
  5. Optional: drizzle melted candy coating and let set
